Catapanus was the name of the provincial delegate officer of the Byzantine emperor in charge of military and civilian government's entire southern Italy in the Byzantine period. This wine is soft pressed and decanted at low temperature. Stainless steel tank fermentation at 15 Celsius for 20 days. After the fermentation the wine is aged for 5 months in the tank and for 1 month in the bottle.
